9 grams Chocolate
25 grams Sugar
230 grams Cold water
3 tablespoons Plain water

French shiny chocolate glaze

Step 1:

First, sprinkle the gelatin powder over cold water, mix slightly, and place it over boiling water until transparent.Step 2:

Pour the sugar and plain water into a pot and heat over medium until boiling and clear. Do not stir during this process; if sugar granules remain in the middle, use a spoon or stick to dissolve them.Step 3:

Let the syrup boil for 10 minutes, then add cocoa powder. Stir continuously until completely mixed.Step 4:

Warm the cream either over steaming water or in the microwave, then add it to the mixture.Step 5:

Shiny chocolate glaze

Allow the mixture to boil for 10 minutes, then turn off the heat and add the clear gelatin from the steaming water. Mix well.Step 6:

Strain the mixture through a sieve; it is very important that the mixture is strained.Step 7:

After straining, add the chocolate and stir untilthe chocolate melts with the warmth of the sauce.Step 8:Allow this sauce to cool at room temperature for about half an hour. It should be cool enough that when you dip your finger, it’s slightly cooler than body temperature.
